We skipped a week of planning because of illness and work and it really showed when we wound up flailing for something to eat near the end of the week. We also plowed through our freezer meals and finally wound up ordering pizza for lunch/dinner. I suppose the upside is that we didn’t spend a whole lot of money on groceries last week.
The weekend is supposed to be cold but sunny, so we’re planning on working in the garden a lot this weekend. That means quick and easy meals that I can leave simmering on the stove while we work and will be filling and warming when we’re ready to eat. Chili and soup are just the thing, plus they’ll provide leftovers for the rest of the week and for lunches.
Dinners (from the plan):
- Saturday: Chili with beans, cornbread
- Sunday: Kale & white bean soup with chicken sausage, garlic bread
- Monday: Leftovers and/or freezer meals (prep lasagna)
- Tuesday: Veggie and mushroom lasagna, salad
- Wednesday: Green chile chicken enchiladas
- Thursday: Me: Leftovers and/or freezer meals
- Friday: French onion soup, spinach salad
